Zucchini’s in Season!

July 28th, 2009

zucchiniFood Gal is a terrific food blog I found recently, with a wide range of great recipes and pictures like the one you see here. The zucchini recipe that accompanies the blog is found on the site Project Foodie. Here’s an excerpt from the Food Gal zucchini blog:

If you’re growing it in your backyard, chances are you’ve got your arms full of the tender, green summer squash that tends to multiply more than a Tweeted celebrity rumor run amok [...]

What to do with this Everest of squash?

You can only make so much zucchini bread, right? And sauteing it and roasting it as a side dish gets pretty ho-hum after awhile.

No way! Not zucchini! If you think it’s ho-hum, you haven’t tried hard enough. Take a look at the Project Foodie recipe, or search for grilled zucchini recipes or baked zucchini recipes on Primo Recipes.

Great Shrimp Recipes

July 16th, 2009

shrimpA delicious looking Baked Shrimp Recipe on Blogchef.net got me thinking about all of the different ways I like to cook and eat shrimp. Here’s a bit of the recipe (and a picture) I found on Blogchef.net:

If you are a big fan of seafood you will love this recipe for baked shrimp. One of the best parts about shrimp is it doesn’t take very long to cook. The cook time for this recipe is only 15 minutes. Even better you can be eating this dish within a half hour. I would recommend using larger shrimp for this recipe but medium will work as well. The cooking process is very simple, the shrimp are first placed in a baking dish and then topped with a sauce and baked.

The recipe does look incredibly easy, and I know from my own experience cooking shrimp that the hardest, most time-consuming part is usually peeling and de-veining the buggers.

There are loads of other great things you can do with shrimp, of course. You can find loads of grilled shrimp recipes, fried shrimp recipes, shrimp scampi recipes, and healthy shrimp recipes at Primo Recipes. Happy cooking!

Strawberry Mania

July 13th, 2009

galetteRecipegirl.com recently posted a delicious looking recipe for Rustic, Fresh Strawberry Galette. The recipe looks easy to make, and involves not only fig jam, but also Girl Scout shortbread cookies. Here’s an excerpt from the recipe:

Slicing into the galette, it was evident that this rustic dessert was anything but soggy. It held together well, and that figgy-cookie layer underneath the strawberries turned out to be an excellent idea. Served warm, this was excellent with a dollop of freshly whipped cream… and the next day it was a treat that we couldn’t resist nibbling on for breakfast. Big thumbs up from all tasters.

Chocolate Chili Bread Pudding

July 13th, 2009

bread-puddingSay it with me: chocolate chili bread pudding. Are there any 4 words in the English language that are so evocative in close proximity to one another? I dunno, maybe I’m just feeling a bit spicy right now…

In any case, I love bread pudding, especially warm, with vanilla ice cream on top. This recipe, from Daemon’s Food, looks especially tempting. You’ll have to visit the Daemon’s Food site for the full recipe, but here’s an excerpt:

The cinnamon and cayenne with the dark chocolate is an incredible comforting and aromatic combination. Here’s a recipe for Chocolate Chili Bread Pudding that is ready in less than an hour. It’s warm gooey sweet fudgy goodness in a bowl that is pure bliss. Make sure you use the best chocolate you can.

I’m thinking I’ll make this one, or possibly a different bread pudding recipe. Maybe I’ll even find myself a fresh vanilla ice cream recipe to serve it with.

Bacon Explosion

July 9th, 2009

baconCheck out this great post on the Bacon Explosion website. It’s a recipe for how to create a sure fire heart attack. But what a way to go! Here’s a list of ingredients:

  • 2 pounds thick cut bacon
  • 2 pounds Italian sausage
  • 1 jar of your favorite barbeque sauce
  • 1 jar of your favorite barbeque rub

Yep, that’s right. 4 pounds of meat, woven together as in the picture at the right, slathered in barbeque stuff. The finished product looks kind of like a juicy football, but you’ll have to see for yourself at the Bacon Explosion site.

Meanwhile, you can search for loads of more, um, reasonable, bacon recipes at Primo Recipes.

Wings, wings, wings!

July 8th, 2009

wingsSeems like every restaurant now has its own special chicken wing recipe. But who wants to go out all the time? Not when there are great recipes online at places like Primo Recipes.

I found a great buffalo wings recipe at the website Nook and Cranny, a site with great recipes and photos like the one here. Here’s an excerpt from their blog post:

First created in Anchor Bar in Buffalo, NY, hence the name, authentic wings are deep fried then covered with a sauce made with butter/margarine and hot sauce. It’s generally agreed that Frank’s Red Hot is the most authentic sauce to use but stay away from the Frank’s bottled buffalo sauce since that kind has weird margarine mixed in. The ratio of hot sauce to butter you use depends on how hot you want your wings. I like my wings pretty hot so I like to use a 2:1 ratio of Frank’s to butter with a shakes of Tabasco. I chose to lightly flour then pan fry the wings slowly over moderate heat, the same method I used for the salt and pepper chicken wings. Purists will say that without the deep fryer, these can no longer be called buffalo wings but this method yields a nice crispy skin and uses much less fat.

You can read the rest of the recipe at Nook and Cranny. Or you can try one of these searches for:

Ultimate Baked Beans

July 7th, 2009

baked-beansI’ll admit it: I’m kind of a nut for baked beans. I’ve pored over loads of recipes, even done several baked bean recipe and plain old bean recipe searches on Primo Recipes, and I’ve found loads of delicious ones. Still, today I want to feature a baked bean recipe from a really fun foodie site, Kevin and Amanda’s Recipes. You’ll have to visit their site for the whole recipe - and for loads of fantastic pictures like the one you see here - but here’s an excerpt:

These baked beans aren’t just any baked beans- they are manly baked beans. They’re meaty, mouth-watering, and topped with bacon. They’re perfect for parties [...] They also are an excellent accompaniment to this Perfect Pulled Pork.  Not only is this scrumptious side dish sure to please, it’s also quite convenient- you can make it up a day ahead and pop it into the oven when you get ready to make it. If your goal is to win friends and influence people [...] make these right away. ;)

Enjoy!

July 4 is for Grilling

July 2nd, 2009

What’s Cooking for July 4? Desserts!

July 2nd, 2009

july4-dessertI don’t know about you, but when I think about July 4, I think about food. Like most holidays, July 4 conjures up thoughts of family time, a day off from work (maybe even a few), and delicious meals prepared on the grill.

But right now I’m thinking about the large quantity of treats we’ll consume on the 4th, and I found a web site to help. Recipeswap, at Syracuse.com, has a post entitled “A Trio of Desserts for July 4,” which includes a recipe for something called a “Black Forest Brownie With Frozen Cherry Cream.” I’m pretty sure I’m going to try that on my family this weekend.

Meanwhile, Primo Recipes has a bunch of great July 4 recipes that are easy to find and make:

Have a great 4th!

Summer’s the Time for Dipping

July 1st, 2009

avocadodipFound a great recipe for roasted corn and avocado dip on The Little Kitchen that Could, a fun food blog. You’ll have to visit that site for the complete reicpe, but here’s an excerpt that’s sure to get you clicking:

If you would like to be a popular guest for any summer soiree, bring this dip along.  I promise you will be a hit.  The combination of sweet roasted corn, creamy avocado, plump tomatoes and fresh cilantro is undeniably wonderful. With just a few other ingredients, you will have a dip that is sure to please.  I had this once in someone else’s home and knew it had to be in my cookbook.

I don’t even like to turn on the oven this time of year - we grill whenever possible, and make tons of salads. The summer is our time to try new, easy, no-cook foods, which makes all sorts of dips a great choice for parties. Here are few searches you can consider trying on Primo Recipes before you head out for a party on the neighbor’s patio:
