Strawberry Mania

galetteRecipegirl.com recently posted a delicious looking recipe for Rustic, Fresh Strawberry Galette. The recipe looks easy to make, and involves not only fig jam, but also Girl Scout shortbread cookies. Here’s an excerpt from the recipe:

Slicing into the galette, it was evident that this rustic dessert was anything but soggy. It held together well, and that figgy-cookie layer underneath the strawberries turned out to be an excellent idea. Served warm, this was excellent with a dollop of freshly whipped cream… and the next day it was a treat that we couldn’t resist nibbling on for breakfast. Big thumbs up from all tasters.

Chocolate Chili Bread Pudding

bread-puddingSay it with me: chocolate chili bread pudding. Are there any 4 words in the English language that are so evocative in close proximity to one another? I dunno, maybe I’m just feeling a bit spicy right now…

In any case, I love bread pudding, especially warm, with vanilla ice cream on top. This recipe, from Daemon’s Food, looks especially tempting. You’ll have to visit the Daemon’s Food site for the full recipe, but here’s an excerpt:

The cinnamon and cayenne with the dark chocolate is an incredible comforting and aromatic combination. Here’s a recipe for Chocolate Chili Bread Pudding that is ready in less than an hour. It’s warm gooey sweet fudgy goodness in a bowl that is pure bliss. Make sure you use the best chocolate you can.

I’m thinking I’ll make this one, or possibly a different bread pudding recipe. Maybe I’ll even find myself a fresh vanilla ice cream recipe to serve it with.

What’s Cooking for July 4? Desserts!

july4-dessertI don’t know about you, but when I think about July 4, I think about food. Like most holidays, July 4 conjures up thoughts of family time, a day off from work (maybe even a few), and delicious meals prepared on the grill.

But right now I’m thinking about the large quantity of treats we’ll consume on the 4th, and I found a web site to help. Recipeswap, at Syracuse.com, has a post entitled “A Trio of Desserts for July 4,” which includes a recipe for something called a “Black Forest Brownie With Frozen Cherry Cream.” I’m pretty sure I’m going to try that on my family this weekend.

Make More Cupcakes!

cupcakeI’m not sure why, but I love cupcakes. There’s something about having my own serving of delicious cake - often beautifully decorated, usually big enough to satisfy yet small enough to avoid significant guilt - that seems absolutely perfect, whether we’re celebrating my daughter’s birthday or just enjoying a night on the patio with neighbors.

So it’s with joy and anticipation that I search for different kinds of cupcakes using Primo Recipes. Here are a few sample searches, all of which return loads terrific recipes, with the best rated and most reviewed first:

Classic Potluck Peanut Butter Chocolate Pie

peanutbutter-pieFound this recipe on The Pioneer Woman, which looks absolutely amazing.  Modestly titled simply “Another Pie,” this recipe - along with incredible photos (like the example here) - may well be THE pie recipe by which all others will be judged. With an amazingly simple list of ingredients, including Oreos, butter, cream cheese, and peanut butter, The Pioneer Woman beats whips, chills and serves a dish sure to impress kids, grown ups, guests - pretty much anyone with a sweet tooth.

A quick search for peanut butter pie recipes on Primo Recipes yields similarly exciting results. Give it a try.

Rice Pudding with Poached Green Rhubarb

greenrhubarbWe in Minneapolis get our share of rhubarb, so I’m often looking for something good to do with it.

Luckily, I just found a delicious looking recipe for rice pudding with poached green rhubarb on the blog The Bitten Word. Turns out you can get green rhubarb, which is fully ripe (I thought it was not yet ripe when I first saw the picxture, before I read the blog). In any case, the recipe looks good and easy, and the instructions say it takes only 25 minutes, so I’m hoping to give it a try soon.
